- Using a basting brush, lightly brush a 13 x 9-inch baking pan with olive oil. In Multipurpose Pot, bring milk to a simmer over medium heat. Simmer for 5 minutes.
- Using Piano Wire Whisk, whisk in polenta in a slow steady stream, return to simmer. Reduce heat to low, and add parmesan. Simmer until the polenta is very thick, whisking often, about 10 minutes.
- Turn polenta out into prepared pan and spread to 1⁄2 inch thick (don’t worry about making it perfect). Let it cool completely. When the polenta is cool, use a 1–2-inch round cutter to cut out 24–30 polenta rounds (as many as you can).
- Brush frying pan with olive oil.
- Over medium-high heat, sauté polenta rounds until they are lightly browned, about 1 minute on each side.
- Top each polenta bite, with a little dollop of Little Italy Sauce and serve.
Add extra layers by adding a little goat or parmesan cheese, and/or finely chopped sundried tomatoes.
